Peach Crumble Pancake Muffins
These peach crumble pancake muffins are a delicious and nutritious snack! They’re perfectly moist, fluffy, and easy to make!
Ingredients
For batter:
- 2 1/2 cup pancake mix (I used Krusteaz Protein Pancake Mix)
- 1 1/3 cup water
- 1 egg
- 3 tbsp butter, melted
- 2 tsp ground cinnamon
- 2 medium peaches, chopped
- 1/4 cup pancake mix
- 1/4 tsp ground cinnamon
- 2 tbsp coconut sugar
- 1 tbsp butter, melted
For topping:

1/4 cup pancake mix (I used Krusteaz protein pancake mix)

1/4 tsp ground cinnamon

2 tbsp coconut sugar

Instructions

Preheat oven to 350 degrees F, and spray cupcake liners with cooking spray.

In a large bowl, combine pancake mix, water, egg, butter, and cinnamon.

Fold in peaches and spoon out into cupcake liners.

In a small bowl, combine crumble topping ingredients, and then sprinkle on top of muffins.

Bake for 35-40 minutes in the oven or until golden brown. Enjoy!
