Peach Crumble Pancake Muffins

These peach crumble pancake muffins are a delicious and nutritious snack! They’re perfectly moist, fluffy, and easy to make!

Ingredients

For batter:

  • 2 1/2 cup pancake mix (I used Krusteaz Protein Pancake Mix)
  • 1 1/3 cup water
  • 1 egg
  • 3 tbsp butter, melted
  • 2 tsp ground cinnamon
  • 2  medium peaches, chopped
  • 1/4 cup pancake mix
  • 1/4 tsp ground cinnamon
  • 2 tbsp coconut sugar
  • 1 tbsp butter, melted

For topping:

  • 1/4 cup pancake mix (I used Krusteaz protein pancake mix)

  • 1/4 tsp ground cinnamon

  • 2 tbsp coconut sugar

  • 1 tbsp butter, melted

Instructions

  1. Preheat oven to 350 degrees F, and spray cupcake liners with cooking spray.

  2. In a large bowl, combine pancake mix, water, egg, butter, and cinnamon.

  3. Fold in peaches and spoon out into cupcake liners.

  4. In a small bowl, combine crumble topping ingredients, and then sprinkle on top of muffins.

  5. Bake for 35-40 minutes in the oven or until golden brown. Enjoy!
