Healthier Rice Krispie Treats
These rice krispie treats are made with brown rice crispy cereal and creamy peanut butter and sweetened with pure maple syrup and dark chocolate chips. They taste so good, you won’t even miss the marshmallows and other unneccary added sugars from the store-bought kind!
Ingredients

3 cups brown rice crispy cereal

1/3 cup chocolate chips

1/4 cup sprinkles

3/4 cup creamy peanut butter

1/4 cup pure maple syrup

1 tbsp extra virgin olive oil

1 tsp pure vanilla extract

1/2 tsp sea salt
Instructions

Line an 8×8 baking dish with parchment paper.

In a large bow, mix together the rice cereal, chopped chocolate, and sprinkles.

Gently heat the peanut butter, maple syrup, olive oil, vanilla, and sea salt in a pot on the stove until everything is smooth and well combined. Do not overheat- it should only take 1-2 minutes.

Pour peanut butter mixture over the rice cereal mixture and gently stir to get everything well coated.

Add mixture to the parchment-lined baking dish. Use the bottom of a jar or glass to press the mixture evenly into the baking dish until flat. Chill in refrigerator for 40 minutes before slicing.
