Sweet Potato Black Bean Chili
This sweet potato black bean chili is simple to make and loaded with nutritiously satisfying ingredients including black beans and sweet potatoes. Best topped with sliced avocado and shredded cheese.
Ingredients

1 medium sweet potato, diced

1 white onion, diced

1 28 oz can black beans, washed and drained

1 28 oz can tomato sauce (I like to use the no salt added one!)

1 cup water

2 tbsp chili powder

2 tbsp extra virgin olive oil

2 tsp minced garlic

1 dash cayenne pepper

1 pinch ground cinnamon

* optional toppings: crackers, shredded cheese, or my favorite – sliced avocado!
Instructions

Heat olive oil in a large pot over medium high heat. Once heated, add sweet potatoes and sautéed for 7-8 minutes stirring occasionally.

Next, add onion and garlic to pot. Sauté for another 2-3 minutes. Add all spices.

Add black beans, tomato sauce, and water to pot, and allow to simmer for about 25 minutes.

Serve with crackers, shredded cheese, or my favorite – sliced avocado! Enjoy!!
