Blueberry Coconut Pecan Oatmeal
This bowl of blueberry coconut pecan oats is loaded with nutrients that will keep you feeling your best all morning long!
Ingredients
- 1/3 cup steel cut oats
- 1 cup unsweetened vanilla almond milk
- 1/2 cup fresh blueberries
- 1/4 cup unsweetened shredded coconut, toasted
- 1/4 cup chopped pecans, toasted
- *optional: blueberries and Greek yogurt for topping
Instructions

Add almond milk to a pot and bring to a boil.

Once milk is boiling, add oats to pot and allow to simmer for 8-10 minutes. Make sure to stir frequently throughout cooking time.

Meanwhile, toasted shredded coconut and pecans in oven on 350 degrees F for 6-8 minutes. Be sure to keep an eye on the coconut because it will toast faster than the pecans!

Add cooked oats to a bowl and top with remaining ingredients.
