Avocado Chicken Salad

This blueberries and cream blended oatmeal is a delicious dish that you can customize any way you want! Just blend everything together with your favorite ingredients, bake, and enjoy!

Ingredients

  • 2 medium chicken breasts, cooked and shredded

  • 2 ripe avocados, pitted and diced

  • 1/4 cup red onion, minced

  • 2 tbsp cilantro, minced

  • 2 tbsp lemon or lime juice

  • 2 tbsp extra virgin olive oil

  • salt and pepper to taste

Instructions

  1. In a large bowl, add shredded chicken, avocado, onion, and cilantro. Stir to combine

  2. Drizzle with lemon (or lime) juice, olive oil, and season with salt and pepper. Toss gently to combine.
