Black Bean Chicken Quesadillas
These black bean chicken quesadillas are packed with faijta chicken strips, black beans, bell peppers, brown rice, quinoa, and spices inside warm, crispy whole wheat tortillas with melted mexican blend shredded cheese.
Ingredients

1/2 pound pre cooked fajita chicken strips

1/2 white onion, chopped

1 bell pepper, chopped
-
1 bag quinoa & brown rice

1-15oz can black beans
-
3 tbsp chili powder (more for spicy)

2 tbsp ground cumin

2 whole wheat tortillas

1/2 cup mexican blend shredded cheese

3 tbsp olive oil, divided
-
*Optional: 1 diced Roma tomato, sour cream, minced cilantro, taco sauce
Instructions

Add pepper and onion to a skillet with 2 tbsp of olive oil and sauté on medium high for 2-3 mins until onions are translucent. Add spices and cooked for about 2-3 mins.

Add pre cooked chicken to skillet and stir until well combined. Allowed to simmer for 5-6 mins.

Lightly cover both sides of each tortilla with remaining olive oil and add the cheese and filling. Top with more cheese if desired.

Fold tortillas into half and place in over for 4-5 mins. Make sure you keep an eye on them because the will burn fast!!

Remove from oven and cut into triangles (1 tortilla makes 2 or 3 triangles!)
