Sweet Potato Black Bean Burritos
These protein-packed breakfast burritos are stuffed with fluffy eggs, sweet potatoes, black bean, and avocado to keep you full all morning long.
Ingredients
- 6 whole wheat tortillas, regular size
- 3 sweet potato, medium
- 1 15-oz can black beans, drained and rinsed
- 1/2 tsp ground cumin
- 1/4 tsp chili powder
- 1/4 tsp crushed red pepper flakes
- 3 large eggs
- 1 avocado, mashed
- 1/2 cup shredded Mexican blend cheese
- 1/3 cup red enchilada sauce
Instructions

Cook sweet potatoes (microwave 4-6 min or cook in oven 45 mins on 400 degrees F). Once cooked, mash with a fork and set aside.

Add black beans and spices to a pot and cook on low for 5-6 mins.

In the meantime, scramble eggs in a skillet.

Place tortillas in microwave for 30 seconds before adding anything. Once warm, spread out the mashed sweet potato one each tortilla. Add all other ingredients and drizzle red enchilada sauce on top. Roll into a burrito and ENJOY!
