Healthier Apple Fritters

These healthier apple fritters are perfectly golden and crispy on the outside with a soft and warm apple center, perfect for a sweet treat! 

Ingredients

For fritters:

  • 2 medium apples, diced
  • 1 tsp ground cinnamon
  • 1 cup unbleached all purpose flour
  • 1/4 cup coconut sugar 
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/3 cup unsweetened vanilla almond milk
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1 tbsp extra virgin olive oil

For glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp unsweetened vanilla almond milk

Instructions

  1. In a large skillet, combine the diced apples and 1/2 cinnamon and warm over medium heat and cook for a few minutes to warm up a bit then remove from heat (5-7 mins).
  2. As apples cook, combine the flour, sugar, baking powder and cinnamon in a large bowl and mix.
  3. In a medium bowl, whisk together egg and milk and vanilla.
  4. Add the wet ingredients to dry and mix to well combine
  5. Fold in apple pieces.
  6. Warm a large skillet with avocado oil then add a heaping spoonful of dough onto the skillet and cook for about 2-3 minutes on each side over medium/low heat then flip and keep cooking for another 2-3 minutes
  7. Repeat for remaining dough then let the fritters cool while you make the glaze
  8. Mix about 1/2 cup powdered sugar with 2 tablespoons milk and whisk well then drizzle the glaze on top!


    Recipe Notes

    1. Top with extra blueberries and Greek yogurt!
