Gingerbread Oatmeal

These oh-so-cozy gingerbread oats are the perfect bowl of goodness for the holiday season! In under 15 minutes, you will have a bowl of goodness that will keep you full all morning long!

These gingerbread oats are loaded with warm, cheerful flavors of pecans butter, cinnamon, and cloves and topped with sliced banana and my homemade gingerbread granola.

Gingerbread Oatmeal

These oh-so-cozy gingerbread oats are the perfect bowl of goodness for the holiday season! In under 15 minutes, you will have a bowl of goodness that will keep you full all morning long!

Ingredients

  • 1/3 cup steel cut oats
  • 1 cup unsweetened vanilla almond milk
  • 1 banana (1/2 mashed, 1/2 sliced for topping)
  • 1/2 tbsp purely pecan butter
  • 1/2 tbsp pure maple syrup
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cloves
  • *optional: homemade gingerbread granola  

Instructions

  1. Add almond milk to a pot and bring to a boil.
  2. Once milk is boiling, add oats and allow to simmer for 8-10 minutes on medium-low heat.
  3. Remove pots from heat and add mashed banana, pecan butter, and spices.
  4. Add oats to a bowl and top with more sliced banana, pecan butter, and a splash of milk! Enjoy!
  5. Add all ingredients except for the blueberries to a blender and blend until smooth.

     

    Recipe Notes

    1. Make two servings and place extra in a meal prep container for serving the next day! Reheat by adding a splash of milk or water to oats and placing in the microwave for 30-60 seconds.
