Ingredients

  • 1 medium sweet potato

  • 1/2 cup creamy peanut butter

  • 1/2 cup pure maple syrup

  • 1/2 cup unbleached all-purpose flour

  • 1/4 cup unsweetened cocoa powder

  • 2 eggs

  • 1 tsp pure vanilla extract

  • 1 tsp baking soda

  • 1/2 cup dark chocolate chips

Instructions

  1. Cook sweet potato in the microwave for 5-6 mins.

  2. Combine all ingredients except chocolate chip in a food processor and blend until smooth.

  3. Stir in chocolate chips and pour into a 9×9 baking pan that has been sprayed with cooking spray.
