White Chocolate Macadamia Nut Cookies

These white chocolate macadamia nut cookies are soft, chewy, and made with wholesome ingredients including almond flour, oat flour, and chopped macadamia nuts and studded with decadent white chocolate morsels.

Ingredients

  • 1 + 1/2 cups almond flour

  • 1/2 cup oat flour

  • 1 egg

  • 1/3 cup extra virgni olive oil

  • 1/2 cup coconut sugar

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup white chocolate chips

  • 1/3 cup chopped macadamia nuts

Instructions

  1. Preheat your oven to 350 F.

  2. In a medium bowl, whisk together the egg, olive oil, sugar, and vanilla.

  3. Pour in the flours, baking soda and vanilla and mix well until a dough forms.

  4. Fold in the chopped white chocolate and macadamia nuts.

  5. Line a large baking sheet with parchment paper. Scoop out 2 tbsp of dough. Arrange on baking sheet about 1″ apart.

  6. Bake for 8-10 minutes, until the edges begin to brown.

  7. Let the cookies cool for at least 10 minutes before serving.
