Tag-A-Long Girl Scout Cookies
These Tag-A-Long Girl Scout Cookies are filled with creamy peanut butter and crispy vanilla cookie base and covered in velvety dark chocolate.
Ingredients
- 2 cups almond flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 tsp pure vanilla extract
- 5 1/2 tbsp pure maple syrup
- 1/3 cup creamy peanut butter
- 1/3 cup dark chocolate chips
- 1/2 tsp extra virgin olive oil
Instructions

Preheat the oven to 350 F. Line an 8-inch square pan with parchment, and set aside.

In a large bowl, stir together the almond meal, salt, baking soda, vanilla, and maple syrup to form a dough.

Transfer the dough to the prepared pan, and pat the dough down flat to fit the pan.

Bake 12 minutes on the center rack, then let cool at least 20 minutes before frosting with peanut butter.

Melt the chocolate and coconut oil in the microwave in 30 second intervals. Spread on top of the peanut butter layer. Chill to set.
