White Chicken Chili

This white chicken chili is loaded with protein and fiber-rich ingredients including great northern beans and pulled chicken great for a satisfying and easy dinner!

Ingredients

  • 1 medium white onion, chopped

  • 2 jalepeno, diced
  • 1 habanero pepper, diced
  • 2 can mild green chiles

  • 1 tablespoon ground cumin

  • 1 tablespoon chili powder (more if you like spicy)

  • 1/4 teaspoon dried oregano

  • 4 cups low sodium chicken broth

  • 2 (15 ounce) cans Great Northern Beans, rinsed and drained

  • 1 teaspoon salt, plus more to taste

  • 1 tsp freshly ground black pepper

  • 1 1/2 pounds boneless skinless chicken breast)

  • 1 medium lime, juiced

    For garnish:

  • Tortilla strips or chips

  • Extra cilantro

  • Avocado slices

  • Extra lime wedge

  • Sour cream

Instructions

  1. Add all ingredients to Instant Pot or crock pot and stir until well combined.

  2. Press the pressure cook button and set the timer to 15 minutes.

  3. Once fully cooked, open lid and use two forks to pull chicken apart into bite sized pieces.

  4. A Serve with tortilla chips, an extra lime wedge, avocado, and/or a dollop of sour cream if you’d like. Enjoy!
